Feast In The Forest Sunday 3rd of March 2013


Waterford Festival of Food launched their 6th Festival of Food on Sunday. Eunice Power prepared a feast in the forest at Colligan woods on a glorious spring afternoon. Over a 150 guests attended - most arrived by bike! Guests enjoyed wild garlic soup, spit roast Comeragh Mountain Lamb cooked over a wood fire, and rhubarb and rosewater pannacotta.

Wonderwomen of Business Award-Winners Announced

The WEN Wonderwomen of Business Awards took place on Friday 15th June at Lismore House Hotel. Guest speaker, Lauren Fisher of Simply Zesty flew in from London to join the local businesswomen in their celebrations. Having started her business from her bedroom, Lauren successfully grew the company and sold it to UTV for £2million. As part of the deal, she still works for the company and is currently growing the UK branch.

"Anything is possible," says Lauren, "you just need to put the time into building your dreams. There's always an extra hour in the day that you can use, whether that means getting up an hour earlier or staying at it an hour longer in the evening, if you want success you'll find the time."

County Manager and Chair of Waterford County Enterprise Board, Denis McCarthy, congratulated all the finalists and highlighted the importance of female entrepreneurship to the achievement of the county's economic plan. Anike Tyrell, CEO of Waterford County Enterprise Board, who sponsored the top prize of €2500 worth of social media from Simply Zesty spoke about the impact of social media and about the female contribution to social media. This was the first time these awards have taken place in Co. Waterford and the standard of entries was extremely high.

The wonderwomen of business award winners were: Businesswoman of the Year, Eunice Power; Outstanding Professional Service, Tracy Quinlan; Outstanding Employee, Jenny Beresford; Outstanding Personal Service, Olivere Lannen; Excellence in the Arts, Miranda Corcoran; New Business, Breda Mackle; Tourism and Leisure, Imelda Walsh; Food, Audrea Hassett and Online, Emma Penruddock.

Dungarvan Enterprise Centre was proud to be involved in the Waterford WEN and also host the WEN meetings once per month. It is a free network open to all women in business. The network offers skills development, guest speakers, networking and referrals. We look forward to starting meetings again in September. Waterford Festival Of Food

Our Waterford festival of food takes place on the 12, 13, 14 & 15th of April. We have an exciting line up of fabulous foodie events. Myself and two Dungarvan girls, Niamh Shields - AKA Eat like a girl, and Claire Dalton from Dungarvan Brewing Company have a pop up restaurant planned for Saturday the 14th of April at the Council offices in Dungarvan.

Eunice Featured In The Irish Times

Eunice Power, one of the driving forces behind the Waterford Food Festival, appeared to have a clone over the weekend, as she kept popping up all over the place - giving a baking course at the Tannery Cookery School, looking after guests at her Powersfield House B&B, and cooking up a giant paella for customers at the farmers' market.

Power, who also runs a catering business, was one of many customers at the market stocking up on Triskel fresh goats' cheese made by Anna Lévêque in Portlaw. Lévêque, who was named "2010 artisan of the year" by the Bridgestone Guides, had been having difficulty keeping up with demand for her cheese, but she now has more milk to work with, and is supplying Sheridan's Cheeesemongers. Which is good news, as it's the perfect cheese to use in Eunice Power's goats' cheese and apple dressing.

"At this time of the year, the addition of a few wild garlic leaves (two or three) to the dressing gives it a wilder flavour and a pretty green colour. The dressing is beautiful with purple sprouting broccoli, asparagus or as a dressing on a Baby Gem or Cos salad with spinach leaves and thin slices of Granny Smith apple. I use Crinnaghtaun brambly apple juice when making this, as it has a unique, bitter-sweet flavour, and it's local," she says.

Eunice Power's goats' cheese and apple dressing

100g mild creamy goats' cheese
86ml apple juice
1 garlic clove chopped (or a few wild garlic leaves)
Maldon sea salt and pepper

Place the goats' cheese, apple juice and garlic into a blender and whizz until combined. Season to taste, and chill until needed.

My Hens

My four girls... Ed and my littlest fellow Kieran bought the hens at the local mart last September, we minded them for 4 months, fed them cleaned up after them and then in month five they started to lay. In the meantime I fell in love with the hens. They are so inquisitive, innovative, work in packs scarifying the lawn, picking up the oats as bread leaves the house to the shop, any bit of activity and they are in on it. And the eggs are sublime eaten warm, the whites are milky, yolks are golden. I suppose living in a house of males they are my allies. Hen's rock! I haven't named them yet, each has their own personality, the boss, the hider (hides her eggs in the garden, but I have her hidey holes sussed) there is one who always wants to come into the house, then the last one who would poo in your eye.... my least favourite. I won't say that they are no trouble, but they are lovable interesting and beautiful creatures.

We are now eating eggs every day, boiled in the morning and omelettes, pancakes and frittatas for tea. Love giving eggs to my mum on a bed of straw. Feel I have arrived as a farmerette! Thank you dear little hens, I hope we have a long meaningful relationship!

Ten years in business is a milestone for any enterprise, not least a small catering business operating in a highly competitive market during the worst economic downturn in living memory.

Yet, none of this seems to faze Eunice Power, who not only is an award-winning chef, caterer and cookery book author and tutor, but also one of the co-founders and director of the annual Waterford Food Festival.

She also works on an ad hoc basis with Tourism Ireland, and often travels overseas to prepare meals using Irish produce for foreign ambassadors and trade ministers.

Power opened her guesthouse and cookery school business at Powerfield House outside her native Dungarvan in 2001, after working in contract catering and the hospitality sector in Ireland, Britain and Switzerland.

She also began supplying her local specialist greengrocer, the Country Store, with homemade breads, cakes, jams, chutneys, ready-meals, soups and other seasonal produce.

'The business evolved over time when, about five or six years ago, I was approached by clients looking for outside quality catering,' she said.

'That is both a mix of formal and informal dining, to a high standard - not the kind that requires disposable plates and cutlery.

'It extends to corporate functions, conferences, weddings and other offsite events and can be both outdoor and indoor - so [can be hosted in] marquees, private estates and houses, castles or even a hay shed,' said Power.

Her client list includes Irish Rail, Dublin City Council, Pfizer, the Royal College of Surgeons, Waterford County Council and Tourism Ireland.

A recent increase in demand for onsite catering - preparing food at the client's chosen venue and cutting out room rental costs - from the corporate and wedding sector led Power to rebrand and relaunch her website, and reposition herself in the market and build the business further.

'Catering is considered a lucrative business, but it's hard to make money on good quality, wholesome food in Ireland,' she said.

'A lot of catering firms are closing, so you have to simultaneously keep your business small but be able to scale up for any occasion.

'A dinner party for 20 people is easily doable. A sit-down dinner for 1,000 is in a different league.

'I have a good organisational background from working in hotel management in Shannon. Catering is demanding and requires stamina and an ability to work under pressure. 'You also have to build up a good reputation for your business. If you use local suppliers, they will look after you.

'You have to have a strong core team and invest in training them. And you also need to pay people and get paid on time.

'I haven't had a chance to think about celebrating a decade in business,' Power said. 'But I will organise something for it. I can't let it pass without marking the occasion,' she said.

New Website For Eunice Power Outside Catering

John McKenna of the Bridgestone Guide, among Ireland's most respected food experts, last week labelled Eunice Power as "One of the archetypal female food dynamos," and advised that "Whatever your catering requirements Eunice should be your first port of call." This was in response to the launch of Eunice Power's wonderful new website www.eunicepower.com.

Eunice has, over the last ten years, established herself as one of the foremost caterers in the country. She and her wonderful team have provided delectable food and outstanding service for every size and type of event, from intimate family gatherings to public openings of in excess of 2,000 people. However Eunice has never rested on her impressive laurels and in the last few months, working in conjunction with Dungarvan based, award-winning Totem Visual Communications and Deise Design, she has re-branded her business and her original website has been replaced with a crisp and sparkling new look. These efforts have all combined to reflect the freshness and energy which have become synonymous with Eunice Power's cooking. The site features beautiful photography, delicious recipes, details of types and styles of catering for all events, including wedding catering, and a quick financial quotation service.

Officially launched last week www.eunicepower.com has received a wonderful response.
